Hot Chicken Wings with Blue Cheese Sauce Recipe
This is a great hot wing, but the sauce really makes the dish.
Ingredients:
Hot Wings:
2 lbs. Chicken Wings
Peanut oil
1 tsp. Garlic Powder
1 Cup All-Purpose Flour
Salt and Fresh Ground Black Pepper
2 tsp. Ancho Chili Powder
1 to 2 Tbsp. Pureed Chipotle Chile in Adobo
1/2 Cup Red Wine Vinegar
1 Tbsp. New Mexico Chili Powder
2 Tbsp. Ancho Chili Powder
1 stick Butter, unsalted (quartered)
1 to 2 Tbsp. Honey
1 tsp. Salt
1 Tbsp. Dijon Mustard
Blue Cheese Sauce
1/4 Cup Blue Cheese, crumbled
1 Cup Greek Yogurt
2 Tbsp. Fresh Cilantro Leaves, finely chopped
2 Tbsp. Red Onion, finely grated
Salt and Freshly Ground Black Pepper
Directions:
Hot Wings
Split the wings at the joint, and remove the wing tips. In deep fryer, heat 2” of oil, until it reaches 375 degrees F.
Combine the garlic powder, flour, salt, pepper, and ancho chili powder, in a small bowl. Coat the wings in the flour mixture, and add to the hot oil. Cook for 8 to 10 minutes, until the wings are a golden brown. Remove, and let drain on paper towels.
In a large sauté pan on medium heat, add the chipotle puree, vinegar, New Mexico chili powder, and chili powder. Remove from the heat, and add the butter, honey, salt, and mustard until it’s smooth. Coat the wings.
Blue Cheese Sauce
In a bowl, stir in the blue cheese, yogurt, cilantro, red onion, and salt and pepper. Refrigerate for 30 minutes.
